To make chilsketti: Make spaghetti sauce with meat. Simmer lots, so the ground beef is what some people would consider overcooked but at a texture where I actually like it, and it goes all thick and yummy.

More specifically: Brown a package of hamburger. Drain, and in the same pan, brown an onion and your choice of additional veggies. (I like lots of mushrooms, zucchini, and sometimes eggplant.) Smash a couple of cloves of garlic, and add. But hamburger back in apn. Then add a can or two of diced tomatoes, and spices of your choice. (I usually add oregano, salt and pepper, a bay leaf, and cayenne, and a tablespoon of plain, unsweetened cocoa. Strange but true.) Simmer for forty-five minutes or so. Then it will be thick and yummy. Fish out the bay leaf and the whole garlic clove. Add olives if you so desire.

Then, put on spaghetti! Yum!
